Take 1 bobcat. Case skin it so you don't nick the intestines in the process. Save the skin 'cause that's why you shot it in the first place. Remove the hindquarters and clean them thoroughly, because you got a lot of hair on them while you were skinning it. A creek is good for this, rather than a swamp, but they tell me the tannic acid in swamp water makes it less likely to have harmful bacteria and other parasites.

Salt and pepper it (the quarters, not the hide), then either marinate in wine, shrub, anything with alcohol or acid in it, or just skewer it and cook it over the fire until well done.


Some folks say it tastes like chicken, fish or rabbit. I guess that depends on what the 'cat had been eatin.
