|I am a litte surprised that I haven't found this yet. Cattail shoots are a great subsitute for onions and they are thick enough that you only need one to add to a pot. Make sure that you get the shorter ones, before they have tops on them. Simply pull them out of the marsh, wash, peel off the outer layers just like a green onion, and use them for whatever you would do with onions.
