|as given by SPECK : 1909 pg 24..= a favorite method of cleaning fish the instant they are caught , is to draw out the intestines with a hook through the anus ,with out cutting the fish open . a cottonwood stick shaved of its outer bark is then inserted in the fish from tail to head . the whole is thickly covered with mud and put in the embers of a fire . when the mud cracks off the roast is done and ready to eat. the cottonwood stick gives a much liked flavor .. now this type of cooking is very common in the south east .. as i've grown up on catching fish , crabs , snake , turtle , and even fowl , and preparing it to dine on in this fashion , once removing the guts of your meal the scales , feathers come right off as the mud or clay is peeled away , and your meal cooks in its own juices and comes out moist and tender and is hard to over cook and or burn .... and if you have some spices or veggies or wild root foods you can place them on the insides of your meal to flavor .. weel till forest or glen watch your top knot ..
